LEMON TAGLIATELLE
This tagliatelle is speedy and simple but extra special. This zesty pasta is a great go-to dish.
Serves 2
INGREDIENTS
1 lemon, juiced and finely zested
2 tbsp Arbequina Extra Virgin Olive Oil
250g fresh tagliatelle
50g 22 Month Parmigiano Reggiano grated plus more to serve
25g rocket
METHOD
- Mix together the zest, juice and oil in a large pasta serving bowl.
- Cook the tagliatelle according to packet instructions, drain, and add to the serving bowl.
- Season, add the cheese and toss together to coat in the dressing. Top with rocket.
