LEMON TAGLIATELLE

This tagliatelle is speedy and simple but extra special. This zesty pasta is a great go-to dish. 

Serves 2


INGREDIENTS 

1 lemon, juiced and finely zested
2 tbsp Arbequina Extra Virgin Olive Oil
250g fresh tagliatelle
50g 22 Month Parmigiano Reggiano grated plus more to serve
25g rocket

 

METHOD

    1. Mix together the zest, juice and oil in a large pasta serving bowl.
    2. Cook the tagliatelle according to packet instructions, drain, and add to the serving bowl.
    3. Season, add the cheese and toss together to coat in the dressing. Top with rocket.
