Minus 8 is a family-owned vineyard in Niagara, Canada where the grapes are harvested and pressed before being made into vinegar or verjus. Their red verjus is made with naturally frozen icewine grapes which grow in rich, fertile soil between two Great lakes and are hand-picked between August and January. With well balanced, sweet and sour flavours this red verjus can be used as a base for sauces, dressings and marinades.
